Finca Jocotales are small farm owned by Alexander Illescas and also he presents local group of coffee producers, located in Ciudad Vieja, Sacatepequez (the very first capital of Guatemala. And just 10 min from Antigua) This farm is only dedicated to different types of honey processing.

The Ciddad Vieja & Antigua Guatemala Region is one of the most popular throughout the world and is loved by everyone who has ever tasted coffee from this area. It is often characterized for being outstanding in the cup. This coffee's complexity varies and normally exhibits a floral acidity that is often spicy or chocolaty. This valley is enclosed by three volcanoes: Agua, Fuego and Acatenango. Its climate is temperate year-round with steady moisture that makes this a suitable and perfect place for coffee to be slowly nurtured. Cool nights finalize the process of stabilization, allowing for no extreme climate variations between the dry and wet seasons of Guatemala.



Coffee flavor resulting from Honey Process is quite unique.  it is called called semi-washed process that leaves pulp on the beans which make them sticky. There are several different types of honey process that this farm does : Yellow, Red & Black honey process.  The types of honey process are identified by color of yellow, red and black. Each color indicates a different level of pulp, called mucilage, left on the coffee bean and drying time.  The mucilage left on the bean impacts the flavor and sweetness of the brewed coffee it will produce.  Yellow Honey process produces a cup profile with floral and apricot notes. And Red Honey results in a sweet and syrupy cup. Finally, Black Honey process produces a coffee that is full bodied & very sweet along with fruity flavor
